Pepita flax brittle

Pepitas (i.e. pumpkin seeds) are full of omega 6 fatty acids.  Pair that with flax seeds, which are full of omega 3 fatty acids, and you have a brittle that is tasty and full of omegas.  Even better, omegas improve kids learning abilities, so you are not only feeding their bellies, but also their brains. 

This brittle is sweet with a little bit of a savory bite, so it's satisfying all around.  It's also a little gooey, so it's fun to eat too.   



Prep time: 20 minutes (mainly cooling time)
Serves: 5-6 kiddos

1 teaspoon butter
3 tablespoons honey

Cook the above ingredients in a saucepan over medium heat, stirring with a wooden spoon, until golden and bubbly.  Then add:

1/3 cup roasted flax seeds
2/3 cups pepitas
1/4 teaspoon salt

Stir in the seeds and nuts until everything is hot and coated.  Then spread out on a small baking sheet that is covered with parchment paper.  Let cool for at least 15 minutes, then cut into squares with a sharp knife.
