I have to admit that I got this recipe from a Wellness magazine published by the University of Arizona. This is a snack for older kids since they're eating a whole apple as opposed to bite size pieces. It's designed to make and then eat later, so pack it in your kid's lunch box or as a snack for after school activities.
Like the dipping sauce, you can use banana instead of apple. In addition you can also use cashew, almond or sunflower butter for children with peanut allergies or to add a little variety.
1 apple 2 tablespoons peanut butter handful of trail mix or dried fruit
Cut the apple in half and then core it, ideally using a melon baller so you form a deep canal. Then fill with peanut butter. Sprinkle with trail mix or dried fruit. Then put the two halves back together so that the stuffing is sealed in the center and pack in an air tight container for later.
